1 mini daikon
Ponzu, 2 tbsp.
Mayonnaise, 2 tbsp.
Japanese dashi (soup stock), 1 tsp.
Sesame seed (whole or ground), to taste
(1) Cut daikon into 2 " strips (julienne).
(2) Mix the ponzu, mayonnaise, dashi, and sesame seed together.
(3) Combine (1) and (2) just before serving.
*Ponzu is a citrus seasoned soy sauce which can be found in most Asian supermarkets. You can create the same taste using soy sauce and a generous dash of lemon juice.
*Japanese dashi can also be found in most Asian supermarkets. If unavailable, it can be omitted, or chicken stock can be substituted.
