Pickled napa cabbage

This is a delicious "quick" pickle recipe that be made in advance and enjoyed for several days. The mild fermentation process will improve the nutritional profile of the napa.


napa cabbage, 1 medium or 1/2 large

salt, 1/2 tsp~

Chinese chicken stock, 2 tsp

sesame oil, 1 tsp

garlic, 1 clove, grated

ginger, 1/2 inch or so, peeled and grated


(1) Shred the napa, or cut it into bite-sized pieces.

(2) Combine napa and all other ingredients.

(3) Chill and eat. The flavors will continue to improve for several days.
